The ideal NC1000 would be a 3-cylinder. To start the joke, 3/4's of a Jazz / Fit engine. That way it could keep its economical under stressed character but gain significant power and smoothness. Give it belt drive and I would buy one.

I agree that attempting to hot rod the engine will most likely end badly, but I am having trouble thinking of anything a normally intelligent person could do to an NC700 suspension, brakes, lighting, or seat to make it worse than stock. The decisions have "price point" written all over them...

If you have to lower the gearing, larger sprockets on the rear are more chain-friendly than smaller sprockets on the front. Three more rear teeth is just about equivalent to one less front tooth. And really, who wants one less front tooth? Not me.
