Best adjustable front and rear suspension pairing.

Been researching suspension and it’s just all getting so confusing. I pretty much just want someone to tell me what is the best adjustable rear shock and the best way to adjust the front shocks/front suspension. I have a 2012 NC700X for anyone who’s going to ask. Rn it is full stock minus an LED bulb I put in for the headlight.
 
What do you want about the suspension to be adjustable? Do you want to be able to continually adjust sag or ride height for changing loads? Are you wanting adjustable damping for different riding situations? Or, do want adjustable settings to dial it in for your needs, then leave it alone?
 
My biggest concern is sag for different loads. I plan to do road trips and pack on gear and I also ride double with my girlfriend as well. I want to be able to change the sag for when I’m riding solo, no gear, to when I’m riding double with gear (just an example). All other features would be luxuries. Although it’d be nice for when I go down fire roads or whatever it may be.
 
Best is different for different owners but was happy with the Cogent Dynamic rear shock and Cogent Dynamic Drop-In Cartridges for the forks. The shock had a rotating threaded ring and the tool to fit it so as to adjust sag. Not as easy as a remote preload adjuster but not hateful for occasional changes. To make sag adjustable on the forks I installed fork caps for a Honda CB1100. They have about 15 mm preload adjustment. Honda part number 51450-MGC-003.

so was there two things you did to the forks or just one thing? Can’t tell if you just did caps or did caps and springs.

Forks - Cogent DDC Cartridge kit and added CB1100 fork caps. Stock springs were fine for my weight and were retained.
Shock- Cogent Moab Adventure

Cogent doesn't list a shock for every bike. The Moab Adventure is based on an Ohlins body with a custom spring and valving to match your weight and anticipated use. It has adjustable rebound damping and a threaded preload adjuster.

You can call them and they will discuss with you what you are looking for then build the DDC cartridges and shock for you.

I called and spoke with Rick or his sales assistant. Small business, the backbone of America.

I don't think the NC700X was ever listed in the product line-up but a member here, Kebrider, lived close to Rick's shop and Rick had done suspension work for previous bikes Kebrider owned. Cogent worked on that first NC as a prototype and Kebrider was effusive in praise for the way the bike was transformed with a Cogent DDC kit and rear shock. I was able to ride his bike one day and called Rick the next week and ordered the fork kit for my bike. Without Cogent springs the kit was $189 IIRC. I am light at 150 ish pounds and the stock fork springs worked OK for me. Later on I traded that bike and still later bought another NC700X. As soon as I got the second bike home I called Rick and ordered a fork kit and a shock set up for the bike and my weight.
 
Cogent DDC in the forks and a Wilbers shock with adjustable rebound damping and remote adjustable preload built for my weight with occasional pillion and luggage. Very happy with this setup. The stock rear shock is a joke.
