I was wondering if anybody tried fitting 180/55-17 tires to NC700X rear. (Stock is 160/60-17) I only ride my NC for commuting so off road riding.

The real question is why?
Yes, you can put on a 180/55-17 tire on the rear wheel, but the width of the rear wheel rim is too narrow: (refer to rear wheels) Tire/Wheel Fitment | Ridewright Wheels. With too narrow of a rim, the mounted tire won't have the right profile and the bike's handling may be adversely effected.
Commuting or not, a 180 width on a 4.5 inch rim is an improper fit; you will pinch the tire as already noted. And wider than design tires tend to slow turn in.
