Has anyone out there taken their NC 700 thru water? I am wondering how deep we can ride in water before swamping the air box.

The airbox intake from memory is up high at the steering stem. If You were in that deep then You would be very wet indeed. ;)
 
Up to the knees max while on the bike.

But if you stall water gets in through the exhaust and it's game over.

I would not cross water higher than exhaust.
 
DCT bikes have electrical fittings for the transmission solenoids under the right side engine cover barely above the height of the foot pegs. Corrosion from water in these fittings and in the sensors on top of the transmission could lead to expensive repairs.
 
In a downpour, I rode over a flooded road and the water was over the foot pegs. (My feet were soaked.) I’d worry about the exhaust. The DCT parts were fine, but I use ACF50 everywhere on my bike.
