Torque of Nuts and Bolts during Maintenance

Howdy all,
I will be performing my 8000 mile maintenance within the month and had a questions about torque and the bolts. In the service manual, it says to ensure all the bolts and nuts are torque according to the chart on 1-15. On the page it has general torque by bolt type and for the frame/engine.

Question... do you guys torque any bolts you remove under the tuperwear and then all the externals when done? What is the general rule of thumb? I was thinking of double-checking all the ones I can see when done with the service.

Plastic bits, no Just snug is good for me. Metal into metal, YES!!!. Especially the drain plugs, and drain bolts (DCT) Filter. Strip those and you will have huge problems.

I'm replacing the rear sprocket on my NC700. I can't find the torque value for tightening the 5 nuts that hold the rear sprocket onto rear wheel. Need some help.

It has been great. No worries about sinking.

My dilemma is that I had inadvertently moved the lock ring on my torque wrench and over tightened those nuts and now the studs seems to be spinning and not allowing me to now torque the nuts down holding the sprocket. This appears here (#15): 2013 Honda NC700X Parts, 2013 Honda NC700X OEM Parts - BikeBandit.com (my bike is the 2012 though). Does anyone have any suggestions on how to remedy this?
